 Good Chablis. Very dry. Mineral notes. I like this style but some may find it overly dry. Some Chablis are more open and more full. Mark D. Thu Feb 21 16:55:30 UTC 2013 I've been meaning to try this wine for a couple of months and after labouring away at an exchange with Sebastien in French in Jane's review below, I felt somewhat obliged to try this sooner rather than later. If I read Sebastien's last comment correctly, I think he's suggesting that this wine develops as it increases in temperature so we did just that. I've been reading a lot about wine recently and a lot of what I'm reading about Chablis is that it can be very "austere". My interpretation of that is that they can be bone dry, steely, citric, acidic and perhaps lacking in character. If this is the case, then there's no way this wine can be described as "austere". On first opening, there is a strong nose of apple and mineral which continues to the palate with a lengthy lemony finish. As the wine warms slightly, the apples remain but we then got pears and maybe even pineapple as well. The finish remains quite lemony and lengthy. A very nice wine indeed. Very easy to drink with loads of competing flavour. We'd only tried the Petit Chablis prior to this and I had a look at my review which went on about apples and a sort of velvety texture. That texture is still there in the "standard" Chablis, so what\s the difference between the two? Well, it's always hard to answer that type of question when there have been months between tastings, but I'd say that the 'standard" Chablis (i.e. this one) is smoother, fruitier a tad more complex and has a longer finish. Now looking forward to trying my one and only bottle of the "old vine" version. A lovely wine, Sebastien and in my view, well worth the money although it's a bit expensive as an every day "quaffer". I highly recommend this wine with salads or as in my case with vegetarian moussaka. I wanted something that came close to the particularly dry qualities of Turkish White Wine to have with this recipe which is based on an Aubergine dish I had in Turkey.
